William Angliss trials AuraGold Farms Rain Plum range

Melbourne based, William Angliss Institute, the pre-emminent Australian specialist centre for foods, tourism and hospitality is now trialing the AuraGold Farms range of Ooray Rain Plum products in the lead-up to the launch of a new Australian Wildfoods culinary course for both professional chefs and home cooks.

Willian Angliss Short CoursesWhile there is an emphasis on the health giving qualities of the range AuraGold Farm’s Scott Mathias says the Rain Plum has a prominent place in any recipe combination either as a dried product, powdered and whole,  for use in sauces, chasseurs, desserts and the Ooray Rain Plum Liqueur and the Ooray Plum Mixer, for use  in sweet and dessert formats.

‘The plum is so Australian and incredibly distinctive in its taste and fragrance, it presents an ideal proposition for use in fine dining recipes’, says Scott Mathias. ‘Our goal is to ultimately get the plum onto premium airline and hotel menu’s in a way not imagined and William Angliss’s interest in our range is a fantastic opportunity to ‘initiate’ chefs and cooks alike into the magic of this ancient fruit’.
