Melbourne based, William Angliss Institute, the pre-emminent Australian specialist centre for foods, tourism and hospitality is now trialing the AuraGold Farms range of Ooray Rain Plum products in the lead-up to the launch of a new Australian Wildfoods culinary course for both professional chefs and home cooks.
While there is an emphasis on the health giving qualities of the range AuraGold Farm’s Scott Mathias says the Rain Plum has a prominent place in any recipe combination either as a dried product, powdered and whole, for use in sauces, chasseurs, desserts and the Ooray Rain Plum Liqueur and the Ooray Plum Mixer, for use in sweet and dessert formats.
‘The plum is so Australian and incredibly distinctive in its taste and fragrance, it presents an ideal proposition for use in fine dining recipes’, says Scott Mathias. ‘Our goal is to ultimately get the plum onto premium airline and hotel menu’s in a way not imagined and William Angliss’s interest in our range is a fantastic opportunity to ‘initiate’ chefs and cooks alike into the magic of this ancient fruit’.
William Angliss Short Course Manager, Pauline Dine, says the initial reaction from her tutor chefs ranges from ‘enthusiastic to exciting’.
‘We have so far kitchen tested the liqueur and the powder and all I can say is that the Ooray Rain Plum holds great promise for being one of mainstays of our new Australian Wildfoods course for both professional chefs and home cooks’, says Ms Dine.

I am often asked how I conduct myself on a daily basis – what I eat ? and what I think and feel ? So I thought I would re-share some thoughts originally posted last year via the AuraGold Farms faceBook Fans page.
‘Well unlike other suggestions to achieve longevity based on science, this is what I AM DOING because I have the simple desire to maintain my present physical state – well beyond those prescribed by human social belief or dogma and especially those dictated by so-called modern medicine, which in a number of cases is actually killing more people than keeping them alive.
1. I believe in Gene-Nutrition – using foods to recalibrate or re-school certain genomes based on the creation of certain thoughts motivated totally by my intention to maintain my physical body well beyond 100 earth years old- a mere blink in cosmic terms. In other words I make a ‘connection’ with my food on the basis it is my body’s need first and foremost not the need of my senses.
2. I choose to balance my metabolism by eating the correct caloric balanced foods – eggs, salads, cooked vegetables, fruit, fish, red foods in season – tomatoes, strawberries, and antioxidant functional foods such as beetroot, carrot, kale, and indigenous fruits such as the Ooray Fruit or Davidson plum. I do not labour my body with heavyweight acid based foods such as beef or pork but I do take a little fish periodically. I enjoy a glass of red wine every now and again. I do NOT eat breakfast cereal from a packet. More often or not I will take my VegeShot first thing and do brunch which might comprise of hummus, fried tomatoes (usually heritage tomatoes from one of my market neighbours),some pesto if its done, gluten free and organic lavosh (I do NOT eat bread of any kind now), perhaps the remains of some light curried vegetables from the night before and a cup of plum tea.
I have removed all dairy products from diet along with flour based products including pasta. I have removed all sugar from my diet other than naturally occuring fruit and vegetable sugars. I buy much of my food from my local farmer’s markets – fortunately I have the advantage of being a market person so I am able to access freshly picked or harvested fruit and vegetables each week.
3. I offer thanks for EVERYTHING I EAT AND DRINK. My level of gratefulness and thanks is immeasurable. You do not need to do the math to work out why.

The Rainbow Lotus
4. I drink copious amounts of rain water (not tap water)because I harvest this water inot tanks around my house and RED sugar free vegetable and fruit juices.
5. I use my imagination to transport my mind to the most distant points of the Omniverse – I am not limited to just think within the limitations of this Earthly world or this solar system. I then imagine a direct line back to my body of totally clean creator force. I imagine walking on other stars and planets with my physical body – perhaps somewhat lighter than it is at present but nevertheless ‘my body’.
6. I maintain awareness around assuaging – gently ridding my system of aggregations of toxins from a range of domestic, environmental and mental sources – I owe it to my bio-system to do this now. My body wants to remember its perfection. I am doing all I can to help its memory. My bio-system has perfect immunity and does not require interference from man-made medicine or pharmaceuticals. Within our DNA is the memory of PERFECTION which spans all cellular levels. eating food which enhances this memory of the grux of Quantum Nutrition.
7. I relate to the etheric and elemental energies of the planet Earth upon which I walk. I continually express THANKS for being allowed to be a guest here!! I know as I heal my being, so too does Planet Earth – I heal from the land I walk on and Earth heals from the thoughts I have!!! My relationship with Earth which BTW is an anagram for the word H-E-A-R-T is paramount. My relationship with ‘everything-all there is’ is through Mother Earth. She is in the throes of evolving and we are with her so it make sense we do this together. It also means there is no room for ‘imposter energies’ or being led in inappropriate directions, simple because my focus is in the ‘right ‘ place for me, and I stress me. It is not the same for everyone.
8. I walk my purpose and yes this took sometime to ascertain but I find when I remind myself of why I am here then I feel more relaxed and very much less accepting of the dogma of organised thought whether it be religious, medical, media or philosophical. I leave a wave of energy behind and around me filled with only the most precious thoughts for EVERYTHING AND EVERYBODY.
9. My work with other human beings supports all I AM in this world – all motivations are derived from a place of GOODNESS not greed, avarice or jealousy.
10. In every moment I have all I need to sustain my biosystem and breath – no more and no less and for this I offer THANKS.
So just a few thoughts from me. Feel free to make any comments if you desire.
Thank you.
